Most of our pasta shapes are made with ancient Senatore Cappelli wheat, grown on our certified organic farm, using only natural ingredients and processes. The pasta-making process involves stone grinding in a mill, bronze drawing, and slow drying at low temperatures in an artisanal pasta factory.
